If you spied our family dinner over at Babyccino Kids last week, then you'll know how we roll around dinnertime. Fun, chaotic, veg, organic, and totally us! We had a few recipes for making your own falafel and tahina dipping sauce, but we were requested to also share our Flatbread recipe as seen in the photo, which is super easy to make, the only thing you have to remember is to give it about an hour of rising time and you will be in for a treat. The dough is really forgiving (I usually never measure things, I am a better chef than baker (baker's tend to be very precise people)) and one of our favorite things to do is to dust the tops of the rolled out flatbreads with za'atar, a Middle Eastern combination of lemon-y thyme, sumac, and sesame seeds. You can find it in my good Middle Eastern shops, and after you sprinkle it on the top, just roll over it with your rolling pin to get it all squished in there. You can bake these flatbreads, but they will become more crisp than chewy on the inside, crisp on the outside which is what happens when you grill them on a grill pan. Both are equally delicious though, so have fun and experiment - that's what we do!
1 packet of dried yeast
250ml warm water
500g unbleached flour
3-4 Tbsp extra virgin olive oil
Mix yeast according to instructions (some yeast you add to the warm water first, others you can just add to the flour directly). Put the flour in a bowl and drizzle on the olive oil. Next add the water, adding slowly, until a dough is formed. Knead the dough on a board for about 5-10 minutes, until you see that it’s smooth and elastic. Lightly oil the same bowl you used to mix the dough and roll the kneaded dough in the oil, cover with a slightly dampened warm cloth, and leave in a warm area to rise for 1-2 hours until it’s doubled in size.
Next is the cooking part: you can easily roll it out and bake it in the oven, but I highly prefer (for gastronomic+aesthetic purposes) like to grill them on a stovetop grill, or a bistecchiera. Cook for about 3-5 minutes on each side and VOILA! flatbread perfection.
